Octopus Salad
This is one of my favourite salads and it was my Sicilian mother-in-law who taught me how to make it.
I buy pre-cooked vacuum-packed octopus legs from Woolworths supermarket here in Sydney but you can buy fresh octopus, boil it and use all of it. Be careful not to overcook it or it will become tough.
Cooked octopus (I buy vacuum packed pre-cooked legs)
Celery (including some leaves)
Carrots
Spring Onions
Fresh red chilies (optional)
Green olives, pitted and halved
Parsley
Dressing:
Olive Oil
Lemon Juice
Salt & pepper to taste
Dice the cooked octopus, celery, carrot, spring onions. Add finely chopped red chilies, green olives (halved or in pieces) and chopped parsley.
You could add some salted anchovies cut into small pieces for a stronger fish taste.
Add salt & pepper to taste, drizzle with olive oil and add lemon juice. Adjust to taste.
